Italian Rice Salad

This salad is very light,refreshing and pleasant and at the same time is able to satysfy your appetite.It is very healthy and can be considered a complete meal as the variety of the ingredients.
1&1/2cup long grain rice
1&1/2cup corn Kernel
2 big red tomatoes chopped
1 red pepper chopped
1 5,6 oz.can in oil italian tuna
1 cup giardiniera chopped
3 sliced beef franks
1&1/2cup manzanilla olives
1/2 pound cooked and shelled medium size shrimps
1/4 cup fresh minced parsley
1/4 cup fresh minced cilantro
1 Tsp. dijon mustard
2 Tsp. mayonnaise
3/4 cup extravirgin olive oil
salt and black pepper to taste
Cook the rice in abundant and salted boiling water for 15 min.stirring occasionally.

Drain and let it cool.

Put the rice in a large bowl,add corn,tomatoes,pepper,tuna,giardiniera,beef franks,olives, shrimps,parsley and cilantro.

For the vinagrette:in a medium bowl put the dijon mustard,the mayonnaise,the salt and the pepper and whisk the ingredients adding the oil little by little .

Pour the vinagrette over the rice and toss all together.

Cover the salad with plastic wrap and let it sit in the refrigerator for 2 hours
