Italian Stew

A hearty and filling stew for those chilly days. The ultimate in comfort food.
RECIPE INGREDIENTS
2-3 Tbs Extra Virgin Olive Oil
2 Tbs minced garlic
1-2 tsp Italian seasoning
1 Large onion, diced large
1 red Bell Pepper, diced large
2 C. mushrooms, sliced
2 C. yellow squash, diced large
2 C. zucchini squash, diced large
1-2 pkg smoked sausage, cut into bite sized pieces
2 cans diced or crushed Italian tomatoes & ½ can water
Parmesan cheese
DIRECTIONS
Heat large cast-iron cooking pot on medium-high heat. Add 2-3 Tbs olive oil. Sauté garlic and Italian seasoning on medium-high heat, stirring occasionally for 1 minute. Add onion and bell pepper and continue cooking for 2-3 minutes. Add mushrooms and continue cooking 1-2 minutes. Add yellow and zucchini squash and continue cooking 2-3 minutes. Add sausage and continue cooking 2-3 minutes.


Pour both cans of tomatoes into skillet. Add ½ can of water. Stir to mix well. Heat to boiling. Lower heat to medium-low, cover and simmer for 15-20 minutes.


Spoon into bowls and sprinkle Parmesan cheese on top.
