When I purchase turkey cutlets, I buy a few extra and sautee them. I refrigherate them for a few days and then use them for this recipe. It is easy and delicious!
1 pound cooked white meat turkey, cubed
2 14.5 oz. cans Del Monte Diced Tomatoes with Basil, Garlic, & Oregano
1 cup cooked small shell pasta
1/2 cup shredded mexican 3-cheese blend (or your favorite)
Preheat oven to 400 degrees F. Heat tomatoes and turkey in medium sauce pan over medium heat until simmering. Pour into 9' square, glass baking dish. Add pasta and stir thoroughly. Cover with foil. Bake for 30 minutes. Remove foil, sprinkle cheese on top of dish. Return to the oven to melt cheese - approximately 5 minutes. Serve with simple side salad & Italian bread.
