Jamaican Chicken Kabobs

Give your chicken kabobs a flavourfull kick geared for those who do not like it hot and spicy.
1 lb Chicken Breast cut into chunks
1 Green Pepper chunks
1 Red Pepper chunks
1/2 Pineapple cut into chunks (fresh prefered) or 1 can pineapple chunks
Marinade: Brown Sugar, Butter or Olive Oil, Cardamon, Cinnamon, Rum
Mix 1/2 cup olive oil or melted butter, 1/4 cup dark rum, 1/4 cup brown sugar, 1 teaspoon cardamon, 1/2 teaspoon cinnamon, 1/4 teaspoon salt in a ziploc bag. If you like stronger spice flavours, you can increase the cardamon and cinnamon.

Soak skewers in water, Alternate pieces of chicken, peppers, and pineapple on skewers. Place in the ziploc lock bag.

Marinate at least 3 hours or overnight turning frequently to coat the skewers.

Place on a preheated medium grill and cook until chicken is done. Baste with extra marinade. This can also be done in the oven on a rack.

For a main meal, serve over rice or lettuce If you like dipping sauces, use your favourite peanut sauce or Asian Salad dressing.

Easy to fix, absolutely delicious and have made it twice - it's a keeper. I used red and green pepper chunks the first time but all red is better. Second time I included mushroom caps and they have a better rum flavor than the other ingredients. Ten minutes on each side on a 350 deg charcoal grill - indirect heat. We will make it often!!!
