Japanese Soba & Kale Salad

***Goes very well with Sriracha hot sauce on top if you like spicy!
RECIPE INGREDIENTS
Salad:
2 Bunches dark red Kale or leafy green Kale
1 Large package of Japanese Buckwheat Soba noodles
2 Tablespoon Olive Oil for sautéing
2 Cloves Garlic minced
2 Tablespoons white or black sesame seeds
1/4 cup chopped green scallion
Dressing:
2 Tablespoons Asian sesame oil
2 Tablespoons white rice wine vinegar
2 Tablespoons honey
2 Tablespoons light or dark soy sauce
DIRECTIONS
1. Washed, rip, and destem Kale into bite size pieces, set aside


in large bowl.


2. Pre heat large non stick frying


pan


or wok on Medium heat with olive oil and minced garlic.


3.


Meanwhile, bring large Pot of water to boil for


the Soba noodles.


4. Add kale to heated pan and saute until


leaves are


tender or become slightly darker.


When


the kale is done,


turn off heat and place the kale back into


large bowl, sprinkle


with half the sesame seeds, place


bowl in the freezer


to chill for about 6 minutes.


5.


When the water comes to a rolling boil, add the package of


Soba noodles.


Follow package cooking directions, usually


5-6 minutes, every brand


is a little different. When the noodles


are done, strain them in a large colander over the sink.


Rinse the noodles right away with cold water and drain.


6.


To make the Sauce, mix sesame oil, rice wine vinegar,


honey, and soy sauce


together with a small whisk or spoon


until honey is dissolved.


7. Remove the Kale from


freezer. Toss together,


in bowl, the rinsed Soba noodles,


kale, and sauce. Sprinkle


with chopped green scallions


and sesame seeds. Serve.
