Jason's Quick Tuna Patties and Fried Pickles

Very quick, very easy meal for 2.
2 cans of tuna (in water)
3 slices of whole wheat bread
Jane's Crazy seasoning salt
salt & pepper
3 eggs
1 cup flour
1 Tbsp cornmeal
1/2 cup milk
3 sliced pickle spears (sliced 1/4" thick, shortways)
1 Tbsp cocktail sauce
3 Tbsps sour cream
1. Butter 3 slices of whole wheat bread on one side and lightly sprinkle with seasoning salt, toast on both sides, in toaster oven.

2. Finely chop toasted bread, slightly larger than regular bread crumbs.

3. In a medium-large mixing bowl, add drained tuna, bread crumbs, 1 Tbsp cornmeal, 2 eggs, light shake of seaoned salt, 2 pinches of salt, and 2 shakes of pepper. Mix thoroughly, until tuna is broken apart well.

4. In a large frying pan, heat 1/4" of oil, very lightly seasoned with seasoning salt. Bring oil to a "medium" heat.

5. While oil is heating, wisk one egg in a seperate bowl with 1/2 cup of milk. Drop sliced pickles into the egg/milk mixture to soak.

6. In a seperate small bowl, add 1 cup flour and a light sprinkling of seasoning salt, mix with fork.

7. Drop pickles into flour and toss lightly, making sure pickles are covered well.

8. Form 2 (or 3) tuna patties, about 1/2" thick. Place into heated oil. Drop the pickles into the heated oil around the tuna patties.

9. Cook the tuna patties on both sides until golden brown, only a few minutes. Then, remove to a plate lined with a paper towels to soak up most of the oil.

10. Leave the pickles in the oil, turning often until a very light brown, and remove to towelled plate.

11. While the pickles finish cooking, in another small bowl, mix well 3 Tbsps sour cream and 1 Tbsp cocktail sauce.

12. Plate tuna patties and pickles, and very lightly drizzle the seafood sauce on the patties. Serve immediately.
