This mashed potato casserole makes a great side dish.
RECIPE INGREDIENTS
8 to 10 medium potatoes
1 cup sour cream
8 slices of bacon, cooked and diced
4 tablespoons butter
Bread crumbs (optional)
1 (8-ounce) package cream cheese
1/2 cup minced green onions
Salt and pepper, to taste
2 tablespoons minced parsely

DIRECTIONS
Peel potatoes. Boil potatoes until tender. Dry potatoes with paper towel. Mash potatoes, adding one potato at a time. Keep mashing while adding cream cheese, sour cream and butter. Add onion, bacon, salt and pepper. Put in a buttered casserole. Sprinkle parsely and bread crumbs on top. Bake 20 to 30 minutes at 375 degrees F.


This party side dish may be made several days ahead and refrigerated. Also, may be made two to three weeks ahead and frozen. The secret is not adding milk to the mixture. They may seem a little thick while mashing but their consistency is fine after baking.
