Kale and Potato Soup

Easy to make with Kale from your own garden. Except for the one slice of bacon, this would fit well into the nutrition suggested in T. Colin Campbell, Ph.D.and Thomas M. Campbell II, MD's book THE CHINA STUDY suggesting plant based foods.ingregients.
RECIPE INGREDIENTS
1 slice thich cut bacon, diced into small pieces
2 slices large onion, diced into small pieces
3 - 15 oz cans chicken broth
2 - 15 oz cans vegetable broth
2 large baking potatoes, peeled and dices into 1/2 inch pieces
3 - 4 handfuls coarsely chopped kale
1/4 tsp black pepper
DIRECTIONS
l. Brown bacon and onion in stock pot.


2. Add all broth


3. Add potatoes and simmer until tender.


4. Add dale and pepper. Simmer for ten more minutes.
