This was made by a friend at Thanksgiving 1 year before she died from cancer . I made it the next Thanksgiving from memory. It is now a holiday tradition with my large, extended family.
3 large sweet potatoes(not yams), cut into 1 inch cubes
2 sticks of butter
3 cups crushed Cheezits Crackers
2 cups chopped pecans
1 cup brown sugar, divided
1 egg, beaten
2 TBSP pumpkin pie spice
Cook sweet potatoes in water until soft. Drain water. Mash potatoes in the same pan used to boil them. Add 1/2 cup brown sugar, pumpkin pie spice, let mixture cool a little before adding egg. Check to see if it has enough brown sugar and pie spice to your taste. Spray baking dish with butter flavored Crisco Spray and then spoon mixture into casserole dish.

Mix Cheezits, pecans, brown sugar and melted butter. Spoon topping over sweet potatoes and bake uncovered in a 350 oven for 25-30.
