Kat's Soft Pumpkin Drop Cokkies

RECIPE INGREDIENTS
1/2 cup (1 stick)Butter
1 1/3 cups Brown Sugar
2 Large Eggs (slightly beaten)
1/4 t. Ground Cloves
1/4 t. Ginger
1/2 t. Nutmeg
1/2 t. Cinnamon
1/2 t. Pumpkin Pie Spice
1/2 t. Salt
1 t. Vanilla
2 cups Canned Pumpkin
4 t. Baking Powder
2 1/2 cups Flour
1 cup Raisins &/or
1 cup Chopped Nuts (Walnut, Pecans, or Macadamia)
DIRECTIONS
Preheat oven to 400 degrees


Cream butter and brown sugar in a large mixing bowl.


Add eggs to creamed mixture and mix well.


Add all spices, salt, vanilla, & pumpkin to mixture and beat well.


Sprinkle baking soda over mixture, add flour, raisins &/or nuts and beat until well mixed together.


Cover a cookie sheet with 'release' foil (or use non stick cookie sheet) and drop quarter size drops onto the sheet, spacing only 1 inch or so, as the cookies do not spread out very much.


Bake 13 to 15 minutes depending on size.


Cool and store in a covered container to retain moisture and softness.


Yields 50 to 80 drop cookies.
