The finished sauce can be brushed on grilled food or passed separately.
- 4 tablespoons unsalted butter
- 1 small onion, chopped
- 2 medium cloves garlic, minced
- 2 teaspoons paprika
- 1 tablespoon ground black pepper
- 2 medium lemons, juiced to yield 1/4 cup juice
- 1/2 teaspoon liquid smoke
- 1 teaspoon dry mustard
- 1/2 teaspoon hot pepper sauce
- 1/2 teaspoon table salt
- 2 tablespoons brown sugar
- 1/4 cup cider vinegar
- 1 can tomato sauce (16 ounces)
Heat the butter in a a medium saucepan. Add the onions and garlic; sautè until the onions soften, 3 to 4 minutes. Stir in the next 7 ingredients; cook over medium heat to blend flavors, about 5 minutes. Meanwhile, dissolve the brown sugar in the vinegar. Add the vinegar/sugar mixture and tomato sauce; bring to a simmer. Simmer uncovered until the sauce thickens slightly, about 15 minutes. Serve.
