Lamb Kabobs with Tzatziki Sauce

RECIPE INGREDIENTS
Lamb::
1 1/2 lbs ground lamb
2 scallions
2 tsp onion powder
2 tsp fresh oregano
1 tsp rosemary
1 tsp garlic powder
1 tsp ground cumin
1/2 tsp thyme
1 pint Cherry tomatoes
1 Red onion
Olive oil ( for brushing)
Tzatziki Sauce::
1 (16 ounce) container Daisy Sour Cream (light or regular)
2 cucumbers - peeled, seeded and diced
2 tablespoons olive oil
1/2 lemon, juiced
1 tablespoon lemon zest
1 tablespoon chopped fresh dill
3 cloves garlic, peeled
salt and pepper to taste
DIRECTIONS
Soak wooden skewers in water for ½ hour while preparing lamb and sauce.


Combine lamb through thyme in a mixing bowl and mix until all ingredients are incorporated. Do not over-mix. Let sit while flavors combine. Make Tzatziki Sauce.


In a food processor or blender, combine all sauce ingredients, except salt and pepper. Process until well-combined. Add salt and pepper to taste.


Cover and refrigerate for at least one hour for best flavor. While sauce is chilling, make kabobs.


Form lamb into 2 small ovals around each skewer. Place a cherry tomato and 1 inch square of red onion between two pieces of lamb. Brush entire skewer with olive oil. Grill on indoor grill, outdoor grill or grill pan until lamb is cooked through. Approximately 4 minutes per side. Serve hot alongside Tzatziki Sauce.
