Larry's Slow Cooker Potato and broccoli casserole

2 cups of stuffing mix
2 pounds red potatoes (peeled and chopped into small pieces)
1/3 cup chopped onion
1 container sour cream (8 ounces)
1 can (10 3/4 ounces) of cream of chicken soup (cream of mushroom can be substituted for vegetarian diet)
2 cups Cheddar cheese (I prefer the sharp)
1 family size bag (20 ounces) of finely chopped broccoli (flowerettes are best)
1/4 cup of melted butter
1. Combine the sour cream, soup, onion and 1/8 cup of butter in a bowl (to be poured over the other ingredients in step 2).

2. Combine the potatoes, cheese, onion. and broccoli in the slow cooker. Pour the mixture from step one over the potato and broccoli mixture in the slow cooker. mix well.

3. Sprinkle the stuffing mix over the soup and potato mixture and add the remaining 1/8 cup of butter on top of the stuffing.

4. Cover and cook on low for 8-10 hours (until potatoes and broccoli are soft).
