This recipe is great because you basically put whatever leftovers you want in it. I like to include some kind of meat, like chicken or polish sausage, but these basic ingredients will do you fine.
RECIPE INGREDIENTS
1 cup cooked rice
1/2 diced tomato
1/4 chopped onion
1/2 cup black beans from can
1 tsp olive oil
1 clove minced garlic
1 sprig chopped cilantro (optional)
DIRECTIONS
Heat olive oil in frying pan, sautee garlic and onion


Add in cooked rice and beans, stir and mix until well combined, then add cooked chicken


Add in tomatoes and cilantro, combine and then turn off heat. Add salt, pepper to taste if desired.
