Leftover Pizza Casserole

I came up with this because my wife is a teacher and she was always bringing home leftover pizza from "pizza parties" in her classroom. We wanted to find something we could do with leftover cheap pizza that wasn't very good by itself.
Leftover Pizza
1 large Jar of Tomato Sauce
Ricotta Cheese
Mozzarella Cheese
Parmesan Cheese
Green Peppers
Black Olives
Italian Sausage
Artichoke Hearts
Fresh garlic
Fresh basil
Anything else you want in it
Take your leftover pizza and cut all the crusts off. Find a casserole dish with a lid that will be big enough to fit 2-3 layers of pizza and ingredients and set oven to 350 degrees.

Pour a small amount of tomato sauce into the bottom of the casserole and spread to cover. Add your first layer of pizza trying to fit in the pizza as best possible and cutting smaller pieces to fill any holes.

Spread a layer of sauce and add chunks of ricotta cheese and ingredients to the middle layer that will compliment the toppings already on the pizza (vegetables to meat, meat to vegetables, anything to cheese, etc...)I always like to also add fresh garlic and basil.

Cover with another layer of pizza. Depending on how thin the pizza is and how tall your dish is you can add another layer of sauce and ingredients if you need.

Cover final layer of pizza with a thick layer of sauce, sprinkle liberally with shredded mozzarella and grated Parmesan cheese.

Cover and put in 350 degree over for 40 minutes.

Great Idea!
Fantasic! My husband & his friends are always bringing home extra pizza, but after sitting in the fridge, it never looks appetizing enough to finish & I hate throwing it out! When I tried this recipe, I had more than enough pizza for one dish, but not enough to make two dishes. However, we had a spare chicken sandwich in the fridge, so I cut the whole thing into small cubes and substituted them for the top layer of pizza in the second dish. Sounds strange, but it turned out great!
