Lime-Ginger Curried Chicken Salad

Loaded with apples, golden raisins, crunchy cashews and celery, this curried chicken salad is at once satisfying and lighter on the palate with a citrusy ginger zing.


  • 1 tablespoon curry powder
  • 1/2 cup mayonnaise
  • 1/2 cup yogurt
  • 1/2 teaspoon grated fresh ginger
  • 1 1/2 teaspoons minced jalapeno
  • 2 teaspoons lime juice
  • 1/4 cup chopped toasted cashews
  • 3 cups chopped cooked chicken
  • 1/2 cup golden raisins
  • 1/2 cup diced green apple
  • 1/2 cup diced celery
  • 1/3 cup minced onion
  • 3 tablespoons chopped cilantro
  • Salt and freshly ground pepper, to taste


In a small, dry sauté pan over medium heat, add the curry powder and toast, stirring, until fragrant, about 1 minute. Set aside.

In a large bowl, combine the mayonnaise, yogurt, toasted curry powder, ginger, jalapeno and lime juice. Stir in the cashews, chicken, raisins, green apple, onion and cilantro. Season with salt and pepper, to taste.
