Lime Saffron Rice
- 1 cup uncooked long grain rice
- 1 3/4 cup chicken broth
- 1/2 teaspoon salt
- 1/8 teaspoon ground saffron
- 1 tablespoon butter, melted
- 3 tablespoons fresh lime juice
- 1 tablespoon chopped cilantro
- Salt and pepper, to taste
Combine the rice, broth, salt and saffron in a 2-quart saucepan. Heat to boiling; stir once or twice. Reduce the heat; cover and simmer 15 minutes, or until the liquid is absorbed. Stir in the butter, lime juice and cilantro. Season to taste with salt and pepper.
