LIGHT REFRESHING SUMMER LIME SLAW THAT GOES WITH ANYTHING
RECIPE INGREDIENTS
2-3 FRESH LIMES , JUICED AND ZEST
1 TBLS RED WINE VINEGAR
1 TSP BALSAMIC VINEGAR
1/2 TSP BLACK PEPPER
1 LARGE PINCH OF SUGAR
1/4 CUP OLIVE OIL
1 3LB HEAD OF CABBAGE, CORED AND COARSELY CHOPPED
1/2 SMALL RED ONION- JULIENNED
1 CUP CHOPPED CILANTRO, STEMS REMOVED
DIRECTIONS
Whisk well all ingredients except for cabbage, cilantro,and onion. Set aside


Take cut up cabbage and mix with julienned red onion. Mix well and add the liquid mix and toss until mixed well. Then pack in a bowl or container with lid and refrigerate, turning once in a while. Is better the longer it sits. If making ahead- like days, can omit red onion until last hour or so or all together


**Note, can also toss some steamed or grilled or boiled shrimp in and serve as a light main dish or a salad/appetizer/lunch
