This is a fantastic recipe for a side dish at a cook-out, a picnic, or a meal at home during the winter. Make extra, so your guests can have a second helping, and make copies of the recipe, because they will ask for one. I hope you enjoy it.
6 slices of bacon, diced
1/2 cup of chopped onion
1 (16-ounce) can of pork and beans, drained
1 (16-ounce) can of lima or butter beans, drained
1 (8-ounce) package of sharp cheddar cheese, cubed
1 cup of ketchup
1/2 cup of firmly packed dark brown sugar
1 Tablespoon Worcestershire sauce
1 Tablespoon Grey Poupon mustard, or dark mustard
Heat the oven to 325 degrees. Butter a 1.5 quart casserole pan. In a small skillet, saute the bacon and onions until the bacon is crisp and the onions are lightly browned: drain well. In a large bowl, combine the remaining ingredients. Add the bacon-onion mixture, and mix well. Pour the bean mixture into the prepared casserole dish. Bake uncovered at 325 degrees for 90 minutes. Take it out, and let it sit for a few minutes.
