LINGUINE WITH CHICKEN AND BROCCOLI

A fresh pasta main dish which lots of fresh herb flavor
RECIPE INGREDIENTS
2 large boneless chicken breasts, cubed
1/2 c. green pepper, diced
2 c. broccoli flowerettes, chopped & steamed slightly
4 garlic cloves, sliced (or roasted garlic)
4 TBS. Fresh cilantro , chopped
2 TBS. Fresh thyme, chopped
4 TBS. good olive oil + 1 TBS to marinate
2 TBS. sweet butter
pinch hot pepper flakes
1/2 c. chicken stock, low fat, low sodium
1/2 c. Vermouth, or dry wine wine + 4 TBS to marinate
Parmasan cheese
3/4 lb. linguine, cooked according to directions
2 TBS half & half
1 tsp. cornstarch
DIRECTIONS
Marinate the chicken in 4 TBS white wine & 1 TBS. olive oil for 15 minutes.


In a large frying pan add: Olive oil, 1 TBS Sweet butter, and garlic. Add chicken, saute until almost done, add in green peppers and hot pepper. Saute for 3 mins., add chicken stock (more if needed), and 3 TBS parmasan (whisk in the cheese), and wine. Cook down for about 4 minutes, and add broccoli, herbs. To thicken, mix together the half & half and cornstarch, and slowly add to mixture. Pour over linguine and top with more parmasan cheese
