Live (Raw) Beet Salad - Vegan

This recipe serves the Standard American Diet (SAD) and the Vegetarian and Vegan Diets and supports your liver very well.
1 Medium Beet (organic preferred)
1 Juiced Fresh Lemon (organic preferred)
3 TBS Extra Virgin Olive Oil
1/8 tsp Celtic Sea Salt
Wash and peel the beet. Grate in a food processor using the 'S' blade or use a hand grater then add to a medium size mixing bowl. Juice one lemon and add 1/2 of juice to bowl along with oil and salt. Hand mix and taste. Add more lemon juice if needed. Serve immediately or chill for later. Will keep in refrigerator for at least a week.

Additions: For variety you may also add fresh chopped parsley, cilantro, dill or thinly sliced red onion. Enjoy this as a side dish, atop a green salad or by itself.
