Liver Vegetable Casserole

Don't be fooled--This is delicious!
bacon, 4 slices, cut in small pieces
liver, 1 lb. shinly sliced
1 1/2 c. onion, sliced
3/4 c. celery, sliced
rice, 2 c. cooked white (2/3 c. uncooked) cream of mushroom soup, 1 10.5 oz. can lima beans or green peas, 1/2 c.
milk, 1 c.
cheddar cheese, 1 c. grated, separated in 2/3 & 1/3 c.
buttered crumbs, 1/2 c.
Saute bacon, remove from pan. Brown liver in bacon drippings & remove from pan. Cook onion & celery in same pan until tender. Add bacon & liver back into pan with onion & celery and also add cooked rice, soup, lima beans & milk. Mix well and heat to boiling. Remove from heat and mix in 2/3 c. grated cheese. Pour into a 2 qt. casserole dish, sprayed with non-stick cooking spray. Top with buttered crumbs. Sprinkle with remaining 1/3 c. cheese. Bake at 350 degrees for 20 or 30 minutes in a preheated oven. Serves six.
