Delicious sweet potato soup for Two!
RECIPE INGREDIENTS
1 Large sweet potato
2 garlic cloves minced
1/4 onion finely chopped
1/2 cup red kidney or white beans - mashed
1/2 skim milk
1/2 Fat Free Ricotta cheese
3 collard greens leaves thinly slices in strips (1" long by 1/4 inch wide)
Fat free parmasean
1/4 grated fat free cheeder cheese
1/4 tspn oil
fat free oil spray
1/4 tspn vanilla
tspn of:
cinnamon
nutmeg
pumpkin spice
paprika
pepper
onion powder
garlic powder
ginger powder
dash of salt
2 packets of equal
DIRECTIONS
Microwave potato on high for 8-9 minutes. Spray pot and put in oil, garlic, and onion over medium heat. Add cup water. Let heat til water evaporates. Add beans. When potato is done place in blender or food processor with beans mixture. Blend but do not over blend. Return to pot under low/med heat Add water to blend to shake and pour all into pot. Add milk and another cup of water with rest of ingredients except greens, cheeder, and parmasean cheese. mix until all is incorporated. Add Greens. Cover for 15 mins. Stir occasionally - do not boil. Add more water if needed. When done, divide into 2 bowls and sprinkle each bowl with 1/2 of the cheeder cheese - add parmasean cheese and cracked pepper to taste. Enjoy!

missing some measurements
you seem to have missed some of the measurements...you had 1/4 skim milk ,but 1/4 what? cup? there are a few others like that as well... hard to rate the recipe if i can make it
