The reference books say Trader Vic invented the Mai Tai at his Hinkey Dinks Restaurant in Oakland, California. However, Hawaii and drinking Mai Tai's are inseparable. I use Whaler's, the delicious, dark Hawaiian rum.
1 1/2 ounces light or dark rum
1/2 ounce cointreau
1/2 ounce Almond Sugar Syrup
1/2 ounce real grenadine syrup
1/2 ounce freshly squeezed lime juice
1 teaspoon pineapple juice
Fresh  pineapple spear, for garnish
Put a large handful of ice in a cocktail shaker. Add rum, Cointreau, almond syrup, grenadine, lime juice, and pineapple juice. Shake well and strain into a chilled old-fashioned glass of ice. Garnish with a pineapple spear and serve with 1 or 2 straws.
