Make Ahead Frozen Fruit Salad

This is an awesome recipe to have on hand for a quick serve side with family or even as a refreshing dessert when company stops by unexpectantly. It is pretty addition for a Christmas or Valentines side, luncheon or tea.
RECIPE INGREDIENTS
4 - 6 Ripe Bananas
3/4 Sugar
2 TBLS Lemon Juice
1/2 Pint Sour Cream
15 oz Can Crushed Pineapple
1 - 8 oz jar Maraschino Cherries
1/4 Cup Chopped Pecans

DIRECTIONS
Mash 4 - 6 ripe bananas with 3/4 cup sugar, 2 tablespoons lemon juice and 1/2 pint sour cream. Add 15 oz can crushed pineapple, juice and all; 1 - 8 oz. bottle Maraschino cherries, sliced (add juice from Maraschino cherries for color). Add 1/4 cup chopped nuts.


Freeze, in a 9 x 12 pan, or may be frozen in cupcake liners and placed in a plastic bag when set. If using a 9 x 12 inch pan, after frozen solid, cut into as many squares as needed and place in a Freezer Zip Lock Bag and use as needed.


Remove according to number of servings needed.

Marachino Cherries Did the Trick!!
My 5-year-old granddaughter Abby and I made this recipe one evening and had it for lunch the next day as dessert. When I say Abby is picky, it is a huge understatement. But she LOVED this dish! Of course she ate quite a few marachino cherries while we were preparing the recipe AND I gave her my cherries when we ate, but I got pineapple, bananas and nuts into her! Reminded my daughter of the old-fashioned fruit salads we used to have at church, except frosty cold--a Florida plus! Thanks Allyson
