Make ahead one pot Rum Tum Ditty

make a one pot dinner that can be made the day before, or throw it together when you get home from work. easy to make, great to eat.
RECIPE INGREDIENTS
three pounds of ground beef (i use ground round)
one large vadalia onion (but a reg yellow onion can be used) chopped into small pieces or diced.
one sm green pepper or half of a large one, diced. (can be omitted if you don't like green pepper)
one or two bags(16 0z) frozen corn (depending on how much you'd like in it)
two one pound cans of stewed tomatoes with juice
sea salt
pepper
1 table spoons worstershire sauce
2 table spoons butter (do not use margarine)
four strips of bacon cooked crisp
one clove crushed garlic (can use more if you like garlic)
DIRECTIONS
in medium stock pot or soup pot, cook the four strips of bacon till crisp. remove bacon and drain on paper towels and reserve for later.


to the skillet, add salt, pepper, onions and fry up till they are carmelized. add the ground beef to the pan and cook (stirring constantly till beef is all crumbled)till it is well done.(i usually like it to start to crisp up a bit) add one table spoon of worstershire sauce and two table spoons of butter or olive oil. stir till well combined. add the crushed garlic, stir.


add corn, green pepper and stewed tomatoes and stir till combined.


salt and pepper to taste, cover and simmer on low for about an hour. add crumbled bacon to mixture after simmering is done.


serve with crusty bread of your choice.


making this dish the day before gives the flavors time to meld together, but is great served the same day as well!
