These potatoes made life easy. My child care could make this recipe. There was nothing wasted and there weren't any leftovers. When we didn't have fresh herbs (chives and parsley) from our garden, we used dry herbs.
RECIPE INGREDIENTS
6 cups grated thawed simply potatoes
2 cloves minced garlic
2 tablespoon chopped fresh chives
2 cups medium grated cheddar cheese
1/2 teaspoon salt and pepper
8 ounces sliced brie
2 beaten large eggs
1/2 cup low sodium broth ( veggie or chicken)
1 Tablespoon finely chopped fresh parsley(save for garnishing the top before serving) note:this is optional
DIRECTIONS
1. prepare a 9x12 baking pan with cooking spray.


2. Mix potatoes with garlic, salt/pepper, chives and cheddar cheese. Then spread mixture in baking pan.


3. Mix beaten egg and broth together and pour over potatoes.


4. Lay pieces of sliced brie on top of potato mixture.


5. Bake in oven for 30-40 minutes on 350 degrees.


6. Sprinkle chopped parsely on top before serving.
