Makes 2 cups
This sauce is ideal as an accompaniment to grilled meats, fish, or poultry.
- 2 ripe mangoes, peeled (they should smell fragrant to signal ripeness)
- 2 scallions, thinly sliced
- 2 tablespoons chopped cilantro (coriander) or Chinese parsley
- 1 tablespoon grated fresh ginger
- Juice of one lime, strained
- 1/2 teaspoon low-sodium soy sauce
- 2 drops Tabasco sauce
Cut the flesh off both sides of each mango, as close to the large flat pit as possible. Trim any extra flesh from around the edge of the seed. Remove the flesh from the skin and chop finely.
In a medium bowl, combine the mangoes and remaining ingredients. Refrigerate.
