  • 4 beets
  • For Marinade:
  • 2 tablespoons grated orange zest
  • 2 scallions, finely chopped
  • 2 tablespoons chopped tarragon
  • 2 tablespoons orange juice
  • 2 tablespoons olive or safflower oil
  • Pinch of nutmeg


Cook the beets in a pot of boiling water for about 30 minutes, or until tender. Rinse under cold water and peel away the skin. Dry on paper towels. Cut in half and place in a bowl. Combine the remaining ingredients and add to beets. Allow to stand for at least 1 hour. Serve as an accompaniment to chicken, meat or fish.
