4 beets
For Marinade:
2 tablespoons grated orange zest
2 scallions, finely chopped
2 tablespoons chopped tarragon
2 tablespoons orange juice
2 tablespoons olive or safflower oil
Pinch of nutmeg
Marinated Beets Recipe at
Cook the beets in a pot of boiling water for about 30 minutes, or until tender. Rinse under cold water and peel away the skin. Dry on paper towels. Cut in half and place in a bowl. Combine the remaining ingredients and add to beets. Allow to stand for at least 1 hour. Serve as an accompaniment to chicken, meat or fish.

Marinated Beets a better suggestion
Roast the beets instead of boiling, roasted beets are sweeter and don't taste as earthy. Then follow the rest of the recipe. Mary Lou
