Marinated Mushrooms with Scallions and Tarragon

Cooking.com Tip: Mushrooms are like sponges in that they absorb water. To clean, brush them with a damp paper towel or a mushroom brush. The bristles remove the dirt without damaging delicate mushrooms.
- 2 garlic cloves
- 1/2 teaspoon sea salt
- 6 scallions, thinly sliced, chopped
- 3 1/2 tablespoons red wine vinegar
- 2 tablespoons chopped fresh tarragon
- 1/3 cup extra-virgin olive oil, plus extra to taste
- 1 pound white mushrooms, trimmed, rinsed
- 2 pinches crushed dried red pepper flakes
Finely chop garlic with 1/2-teaspoon salt or smash it in a mortar until smooth. Combine garlic mixture, scallions, vinegar and tarragon in large bowl; whisk in oil. Season dressing to taste, adding more oil if dressing is tart.
Unless mushrooms are very small, cut them into quarters, slightly angling each cut to make interesting shapes. Toss mushrooms with dressing and pepper flakes. Season to taste with salt and pepper. Cover and refrigerate until ready to serve.
