My mother always used to bake Plum Pudding for the New Year, but her recipe called for suet. This is a healthier alternative! There is no added sugar in this recipe, instead relying on the yam, apple juice, raisins and almonds for natural
RECIPE INGREDIENTS
1 medium to large sweet potato (yam)
1 scant cup sliced almonds
1 scant cup cornflakes
1 cup corn meal
1 small can apple juice
1 half-cup raisins
1 half-cup vegetable oil
2 eggs
Cinnamon and/or salt and pepper, you choose, to taste!
DIRECTIONS
Bake sweet potato in 350 degree F oven for an hour. Let cool, peel, then mash in a mixing bowl. This step can be done ahead of time and refrigerated, if need be.


Add all other ingredients and mix well until combined.


Transfer mixture to a small casserole and bake for about an hour at 350 degrees F. Sometimes it won't take this long!
