Mashed Gingered Sweet Potatoes

Makes 4 servings


  • 2 pounds sweet potatoes
  • 2 tablespoons unsalted butter
  • 1/3 cup orange juice or milk
  • 2 teaspoons fresh ginger (about one 3-inch piece), peeled and finely minced
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt


Preheat the oven to 400 degrees F.

Bake the sweet potatoes for 50-60 minutes, or until the potatoes are tender when pierced with a knife.

Scrape the flesh out of the potatoes. Press the potatoes through a potato ricer or food mill or mash them with a masher. Stir in the remaining ingredients.
