Mashed Gingered Sweet Potatoes

  Makes 4 servings
2 pounds sweet potatoes
2 tablespoons unsalted butter
1/3 cup orange juice or milk
2 teaspoons fresh ginger (about one 3-inch piece), peeled and finely minced
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
Preheat the oven to 400 degrees F.

Bake the sweet potatoes for 50 to 60 minutes, or until the potatoes are tender when pierced with a knife.

Scrape the flesh out of the potatoes. Press the potatoes through a potato ricer or food mill or mash them with a masher. Stir in the remaining ingredients.

Good flavor - lousy recipe
If you steam the peeled and chunked sweets, they cook much faster and you don't need to add all that sugar (OJ) or change the flavor (milk) or add fat (milk). If you want the orange flavor, a ounce (or less) will do it, or simply add grated peel for all the flavor without the added sugar. When I steam sweets, I never add liquid to mash them.
