I concocted this recipe for Thanksgiving 3 years ago. It is my most requested dish. For any family, church, or community function, I always have to make this dish. It's fast, easy, can feed a few or a group, is fairly inexpensive, and a real crowd pleaser
Instant mashed potatoes or 3-4 medium potatoes
1/2 cup shredded sharp cheese
Real bacon bits
1/2 cup sour cream
Dried chives
Prepare mashed potatoes following directions on container

* note: As an alternate, we suggest using real mashed potatoes prepared by boiling the potatoes until soft, skinning and mashing them with 3 tbsps butter and salt to taste.

Add sour cream and bacon bits to taste. Mix well. Add grated cheese stirring in gently. Pour into sprayed or greased pan.

Sprinkle with dried chives and bake in 400 oven until top starts to brown nicely

Potato Casserole
A recipe similar is this is very well known all over Utah as "Funeral Potatoes." Yes, everyone LOVES it but it is FULL of fat. It includes real, cooked and grated potatoes, grated cheese, sour cream, and a can of cream of mushroom soup. Our extended family cooks this for every holiday, knowing it is not a healthy dish, really. But it sure does taste good!
