this is a baked apple pancake, it taste more like a pie rather than a pancake.
RECIPE INGREDIENTS
Apple mixture
• 6 cups of Granny Smith Apples (peeled and cut; around 5-6 apples)
• 1 ¼ tbs cinnamon
• ¼ tbs nutmeg
• ½ cup sugar
• Chocolate chips (optional)
Pancake mixture
• ¾ cup milk
• 2 tbs butter (melted)
• 2 eggs
• ¼ cup sugar
• ½ to ¾ cup of your preferred brand pancake mix
• 1/8 tsp vanilla
Topping
Brown sugar
Powder sugar (optional)
Ice cream (optional)
DIRECTIONS
1) Peel and cut up 5-6 Apples, apples should be free of the core. (cut into peanut shape)


2) In a separate bowl, place apples, cinnamon, nutmeg, and sugar. Stir all together, so everything is coated.


3) In another bowl, make your pancake mixture. The amount of pancake mix depends on your preferred brand. You want to have the mix on the thin side, so it will flow when poured over the apples.


4) The pancake mixture calls for melted butter, milk, eggs, sugar and your preferred brand of pancake mix. Stir all together, you want to have mixture on the thin side. (not too thin, just a little thinner than the manufacture recommends)


5) Coat a pan with cooking spray (use a glass pan if you can)


6) In the pan, throw the apple mixture in.


7) Then pour the pancake mixture over the apples, the pancake mixture should cover the apples and settle along the bottom.


8) Sprinkle brown sugar over the pancake batter


9) Bake at 325degrees for 60 minutes or until finished (this is where the glass pan works the best you can see if the bottom is cooked)


10) Remove from oven and sprinkle powder sugar over pancake


11) Enjoy!
