Meatball Soup

This is an old family favorite. It's a real "Dutch" tradition.
RECIPE INGREDIENTS
1 lb. ground beef
salt, pepper to taste
1/2 half tea. nutmeg
vegetable seasoning
2 onions
3 carrots
3 stalks celery
10 cups water
3 bouillon cubes (beef, chicken or vegie)
1 pkg. vegetable soup mix
Handful rice (optional)
Barley (optional)
Fresh Italian parsley
Fresh Lovage
Salt & Pepper to taste
DIRECTIONS
Put water in Dutch oven. Bring to boil


Combine ground beef with salt, pepper and nutmeg and vegetable seasoning.


Roll into meatballs. Keep fairly small


Add to boiling water


Add onion, carrots and celery, and bouillon


Simmer 20 minutes


Add soup package, noodles and rice/barley


Add parsley and lovage


Season to taste
