I love garbanzo beans! You can substitute canned. You can use a slow cooker. Good served with warm French bread. Easy and cheap.
2 cups dried Garbanzo beans
½ tsp dried rosemary
3 Tbsp olive oil
2 cloves garlic, put through press
3 Tbsp chopped onion
2 Tbsp canned diced green chili (like Ortega)
1 Tbsp Worcestershire sauce
3-4 tbsp tomato paste
Salt and pepper to taste
1 cup small shell macaroni
Meatless Monday Garbanzo Bean Soup Recipe at
Soak beans overnight in enough water to keep them covered. The next day add some salt and the rosemary and more water if needed to cover beans and simmer for 2-3 hours until the beans are tender.

Heat olive oil in a small saucepan and add garlic and onion. When onion is transparent stir in canned green chilies, Worcestershire sauce and tomato paste. Add this to beans. Add a little more water to beans, enough to make room for the macaroni. When it simmers, put in macaroni and cook until tender about 20 minutes. Season with salt and pepper to taste. Serves 6-8
