Medieval Fruited Oat Stuffing

This recipe is modified from "Fabulous Feasts" by Madeleine Pelner Cosman. I modified it for cooking in a casserole instead of stuffed inside a bird.
RECIPE INGREDIENTS
2 cups  Oatmeal; uncooked
2/3 cups  Apples; dried
2/3 cups  Figs; dried
1/2 cups  Butter; or margarine
2    Apples; raw
1 cups  Chicken stock; or white wine
1/2    Lemon
1/2 tsp Basil; crushed
1/2 tsp Rosemary; powdered
1/2 tsp Thyme; powdered
2/3 tsp Salt
DIRECTIONS
1) Stir basil, rosemary, thyme, and salt into the oats.


2) Cut butter into oats into pea-sized pieces.


3) Mix in dried apples and figs. Stir in stock.


4) Place mixture into casserole and bake, covered, at 350°F for 45 minutes, until oats are soft.


5) Peel and core apples and dice into 1/4" pieces. Toss with lemon juice to prevent browning. Stir apple pieces into stuffing mix and serve.
