Mediterranean Pork Steaks

A quick tasty recipe that could also be cooked in a saute pan.
RECIPE INGREDIENTS
4 pork steaks/spare rib chops
2 tsp dried oregano
2 cloves garlic - crushed
juice of 1 lemon
2 tbsp olive oil
salt
black pepper
1 tbsp mayonnaise
DIRECTIONS
Mix otgether the oregano, lemon juice, oil, garlic and seasonings in a shallow dish.


Coat the pork in the marinade and set aside for 45 minutes ( or longer if you have time).


Drain the pork - reserving the marinade, and, using a drip -tray to catch the cooking juices, cook over hot coals or under a grill for 10-15 minutes, turning a couple of times.


Rest the pork on a warm serving dish.


Add the meat juices to the remaining marinade in a small saucepan, bring to the boil and reduce the heat to a simmer.


Whisk in the mayonnaise to make a creamy sauce and serve with the pork.
