Medium Chicken Curry

2 Onions
4 Chicken Breasts
182g Mayflower Chinese Style Curry Sauce Mix (Heron)
700ml Water
Half a cup of peas (optional)
Mushrooms (optional)
Sunflower Cooking Spray Oil
1- Dice both onions and slice the mushrooms if you are adding them

2-Slice the 4 Chicken Breasts into small chunks

3- Put a few spays of the sunflower oil into a saucepan/wok and put the pan on high heat

4- Fry the chicken for 3 minutes

5- Add the onions and mushrooms to the pan and fry them for 2-3 minutes

6- At this stage remove everything from the pan and put it into another dish

7- Using the same pan, on medium heat, add the water and then add the curry mix.

8- Whisk the curry mix until it has turned into a sauce texture and bring to the boil.

9- Re-add the chicken, onion and mushrooms and if you are putting peas in, then add them now

10- Simmer for about 10-15 Minutes

serve warm with boiled or fryied rice
