Melissa's Crockpot Tapioca

This is an easy family-favorite at my house. It is a wonderful comfort food that tastes great served hot or cold. We prefer it nice and warm with lots of cinnamon on top. This is most often a dessert, but sometimes we eat it for breakfast!
RECIPE INGREDIENTS
6 1/2 cups of whole milk
1 cup of sugar
1 cup of small (or large) pearl tapioca
2 tsp of real vanilla extract
4 eggs
cinnamon and/or cinnamon sticks
DIRECTIONS
If using small pearl tapioca, you do not need to soak it before hand. If using large pearl, you may want to soak it over night.


Combine milk, tapioca, and sugar directly in the crock pot. Set the pot to high for 2 hours. Remember to check it once or twice and give a stir, if needed. If using cinnamon sticks, feel free to add them in as well.


When the tapioca has thickened (this happens quite suddenly, so keep an eye on it during the last half-hour or so), you will want to use a large liquid measuring cup to scoop out about 1-2 cups of the tapioca mixture. Crack the eggs directly into the measuring cup of hot tapioca and stir quickly. When mixed, poor the egg mixture back into the crock pot and cook for another 20 minutes or so.


Tips: Feel free to add more milk if the pudding is too thick. It tends to thicken more as it cools, so you might want to turn the crock-pot off when it is just a bit thinner than your preferred consistency.


This can be eaten hot or cold. I prefer to eat it hot with lots and lots of cinnamon on top!
