Spicy Mexican Chicken Tortilla Soup
5 lbs of Chicken fahita meat
1 #10 Can of Diced Tomatoes
1 Gallon of Chicken Broth
1 Large Box of Uncle Bens Spanish Rice(institution size)
(Put spice pack in but save rice till later)
1 Cup of diced Celery
1 Cup of diced onion
1 small can of diced Jalapeno Peppers (may be omitted)
Pepper to taste
Put all ingredients into a large soup pot. Bring everything up to a slow boil then turn to Simmer for about 45 minutes. Add rice and continue simmer for another 15 minutes till the rice is done.

Serve in a bowl topped with tortilla chips and shredded cheddar/mozzarella mix (or your favorite cheese).
