This is a quick, easy, and fun recipe. Can be used as an appetizer or a main dish. This is one of our favorites for "Movie Night".
RECIPE INGREDIENTS
1 1/4 LB GROUND SIRLOIN, GROUND CHICKEN, OR GROUND TURKEY
1 PACKET LOW SODIUM TACO SEASONING
1 MINCED GARLIC CLOVE
1 SMALL CHOPPED YELLOW ONION
1 16 OZ JAR OF SALSA
1 CUP FROZEN CORN
3/4 CUP LOW FAT SHREDDED CHEDDAR CHEESE
1/3 cup water
DIRECTIONS
Spray large saute pan with cooking spray and place over medium high heat. Place chopped onion in pan and cook until cooked about 3 minutes. Add garlic and ground meat. Mix taco seasoning with 1/3 cup of water and pour over meat. When meat is almost cooked through, add salsa and corn. Cook additional 5 minutes and add shredded cheese. Once cheese has melted, remove from heat. Sometimes we serve this over rice or over tortilla chips, whichever you feel in the mood for.
