This is an "anything goes" recipe, so you can add or substitute different vegetables.
RECIPE INGREDIENTS
1/2  lb. lean ground beef
1    cup chopped onion
1    cup chopped celery
1 or 2   cloves garlic, minced
2    chopped carrots
2    Tbsp olive oil
1 -  19 oz can kidney beans
1 -  19 oz can chopped tomatoes
2    cups beef stock
2    Tbsp parsley
1/2 to 1 tsp. dried basil
2    cups shredded cabbage
1    cup uncooked macaroni
1    tsp salt
freshly ground pepper to taste
1    cup frozen peas
grated parmesan cheese
DIRECTIONS
Saute beef, onion, celery, carrots and garlic in olive oil until meat is browned and vegetables are tender. Add beans, tomatoes, beef stock and parsley. Bring to boil; add cabbage, macaroni,salt pepper and basil. Cover and simmer 15 minutes. Add peas,and cook 5 minutes longer and served garnished with parmesan cheese.


NOTE: You can add 1/2 lb of Italian sausage if you like for added flavour.
