Mini Crab Tostadas (Tostaditas de Cangrejo)
Yields 40 appetizer servings
A delicious appetizer that's quick and easy to make.
- 1 1/2 cups (8 ounces) fresh, cooked or chopped imitation crabmeat
- 3/4 cup chopped cucumber
- 1/2 cup Crosse & Blackwell Shrimp Sauce
- 2 green onions, chopped
- 1/3 cup mayonnaise
- 1 tablespoon chopped fresh cilantro
- 1 teaspoon lime juice
- 1/4 teaspoon pepper
- 40 round tortilla chips
- 1/2 cup (2 ounces) shredded Monterey Jack cheese
Combine crabmeat, cucumber, Crosse & Blackwell Shrimp Sauce, green onions, mayonnaise, cilantro, lime juice and pepper in a mixing bowl; mix well.
Place chips on ungreased baking sheets. Spoon crab mixture evenly onto chips; sprinkle evenly with cheese.
Broil until cheese is melted, about 1 minute.
