Mixed Grain Salad

This is a delicious whole grain salad. Made ahead & refrigerated, the grains keep well if not pre-mixed with the vegies. Adjust seasonings to taste. Choose brown rice vinegar for variation. Easy to prepare with any vegetables that are in season.
RECIPE INGREDIENTS
1/2 C Brown Rice
1/2 C Wehani Rice
1/2 C Pearl Barley
1/2 C Quinoa (rinsed for 5 mins)
1 C Corn Niblets
1 sweet red pepper, roasted
4 oz. mild green chilis choppd
1 small Jalapano pepper chopped
2 Tbsp. Pine nuts roasted
1/4 C chopped parsley
1/4 C chopped chives or green onion
Dressing:
1/4 C rice vinegar
2 Tbsp. Olive oil
1 clove garlic
1 tsp ground cumin
1/4 tsp. pepper
DIRECTIONS
*Cook barley, brown & wahini rice together.


*Cook Quinoa separately for 10 mins.


*Drain & combine with vegetables, pine nuts, parsley & chives.


*Make dressing by whisking vinegar, oil, garlic, cumin & pepper.


*Combine with the grains & vegies.


*To prepare in advance, refrigrate grains after cooking. *Prepare dressing & store separately.


*Add vegies & dressing at serving time.
