Mixed Herb Salad with Garlic Dressing

RECIPE INGREDIENTS
For the Dressing:
1 head garlic, separated into cloves, peeled and thinlyl sliced
3/4 cup olive oil
1/4 cup fresh lemon juice
1 teaspoon sea salt
1/2 teaspoon freshly ground pepper
For the Salad:
1 large bunch fresh flat-leaf (Italian) parsley, stemmed
1 large bunch fresh mint, stemmed
2 bunches watercress, stemmed

DIRECTIONS
FOR THE DRESSING:
Bring a small saucepan three-fourths full of water to the boil and add salt to taste. Add garlic and parboil for about 3 minutes to soften slightly and mellow the flavor. Drain and let cool.


Place cooled garlic in a small bowl and add oil, lemon juice, sea salt and pepper. Whisk to dissolve sea salt and form a dressing.


TO SERVE:
Combine parsley, mint and watercress in a salad bowl. Drizzle dressing over greens and toss to coat evenly. Serve immediately.
