Mixed Leaf Salad

- For Salad:
- 12 ounces mixed lettuce leaves, such as mignonette, butter lettuce, green oakleaf, spinach, arugula and radicchio, washed and dried.
- For Dressing:
- 1/4 cup olive oil
- 1 tablespoon tarragon vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper
Combine all the salad leaves in a large serving bowl. Tear any larger leaves into pieces of a manageable size.
Combine all the dressing ingredients in a small bowl and whisk thoroughly. Add salt and freshly ground salt and pepper to taste. Pour the dressing over the salad, toss thoroughly and serve immediately.
