Mixed Leaf Salad

Serves 6


  • For Salad:
  • 12 ounces mixed lettuce leaves, such as mignonette, butter lettuce, green oakleaf, spinach, arugula and radicchio, washed and dried.
  • For Dressing:
  • 1/4 cup olive oil
  • 1 tablespoon tarragon vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper


Combine all the salad leaves in a large serving bowl. Tear any larger leaves into pieces of a manageable size.

Combine all the dressing ingredients in a small bowl and whisk thoroughly. Add salt and freshly ground salt and pepper to taste. Pour the dressing over the salad, toss thoroughly and serve immediately.
