Easy, versitile quick dessert bread handed down from my grandma's family. My sister Patty Sue thought she was the first to use the melted butter, but grandma used to use it when she was out of oil. Options and variations are limitless. Get creative.
RECIPE INGREDIENTS
2 cups mashed fruit (any type, bananas, applesauce, strawberries, pumpkin, etc.)
1 cup sugar (or reduce and use more brown sugar)
1/2 cup brown sugar (if you like a light bread, eliminate)
2 eggs
1 teaspoon vanilla (or more if you like)
1 teaspoon salt
1 teaspoon baking soda
1 cube butter melted & cooled slightly or 1/2 cup vegetable oil
3 cups flour (or 2 cups flour & one cup oatmeal)
Options:  mixed fruits, add grated apple, carrot, or zucchini, 1 cup nuts, raisins, chocolate chips or any flavor, or 1/2 cup cocoa.  Just get creative and combine different fruits, veggies, and flavorings. Also, great to sprinkle nuts, candied ginger, etc. on top then bake.  The most favorite is a squash-cranberry-nut bread. And don't forget chocolate-zucchini bread.
DIRECTIONS
Preheat oven to 350 Degrees.


Oil 3 bread pans (40 to 50 min) or a 9" x 13" pan (1 hr.)


In a large bowl, add ingredients all together.


Then mix just until large lumps are gone and all ingredients are well mixed together.


Cool bread pans 10 mins then turn out to cool.


Very moist, dense texture. Slice into 10 pieces & Enjoy!
