Mom’s Blueberry Banana Nut Pancakes

Makes 15 to 20 pancakes

Craving a homemade treat for breakfast? Drop a hint with this easy pancake recipe. It's nice to have someone serve you breakfast in bed once in awhile.


  • 1 box pancake mix
  • 2 bananas (fresh)
  • 1 cup of Wild Oats Organic Blueberries
  • 1/2 cup Wild Oats Walnuts or Cashews
  • Wild Oats Maple Syrup


Prepare pancakes according to basic directions on box. Stir in sliced bananas and 3/4 of the blueberries (more or less depending on preference). Reserve 1/4 cup for topping. Stir in nuts.

Pour on griddle and continue to follow directions on box. In the meantime, heat up the remaining blueberries in a microwave safe bowl for one minute. Add some maple syrup (depending on desired amount) and heat for 45 seconds more. Use as topping for pancakes. You can also sprinkle some additional nuts on top. Garnish with mint spring.
