Very rich and very tasty. People will want seconds. Use a 6 quart crock pot for a small family, a 10 quart crock pot for a large family. After prep, it is self cooking with the exception of a quick stir. I usually start it cooking the night before.
5 lbs potatoes (or more for a large family, people will want seconds)
salt and pepper to taste
heavy cream to cover
crock pot
variations: ham, sausage, onions, carrots, mushroom, black olives, spices such as tumeric, salt, pepper, chili
hard cooked eggs if desired
Clean and slice potato (can be cubed also); cooking time will depend on the thickness of potato. Put a layer of potato, salt and pepper and heavy cream (I use whipping cream) to cover potato. Repeat until crock pot is 75% full, no fuller or it will boil over. Turn on high for 1 hour, then on low for over night or for 8 hours. Stir once in a while, cook until potato is to desired doneness.

Variations: add the variation into each layer, so that the tastes are even. When serving, some people may want to add more salt and pepper. I serve this only at Christmas time, because it is too rich to eat on a regular basis. I like it because it is a time saver on that special day, it makes it's own gravy for the potatoes and depending on how done the potatoes are, it also can make mashed potato.
